  3. Prepare cube Vegetable stock

Pan searing is such a great way to cook salmon. The exterior gets all crisp whilst the inside remains soft, tender and melt in the mouth. And this salmon risotto is no exception. Melt half of the butter in a pan (this can be the same pan as the one you will make your risotto in) over medium-high heat and add in the salmon cubes.

Steps to make Salmon risotto:
  1. Heat olive oil in a saucepan before adding onion and garlic and frying until softened
  2. Add arborio rice and stir until coated in oil
  3. Mix a vegetable stock cube into boiling water
  4. Pour vegetable stock into the pan and bring to boil before reducing the heat and allowing to simmer, stir frequently
  5. Begin cooking salmon in a separate pan along with courgettes and peas
  6. Once softened a little add vegetables to the risotto pan and continue to stir
  7. When the risotto has finished cooking, remove the pan from the heat and stir in a little butter, seasoning also with salt and pepper
  8. Cover risotto with a lid for a few minutes while the salmon finishes cooking and then plate
